A new breakfast and lunch café, Baked on Maine, has officially opened its doors in Brunswick, Maine, following a soft launch earlier in the week. The café occupies the former site of Great Impasta on Maine Street and aims to provide a fresh dining option for the local community.
The café opened on January 2, 2024, and features an extensive menu that includes breakfast options, sandwiches for lunch, and a variety of baked goods sourced from its affiliated bakeries, Wildflours Gluten-Free Bakery in Brunswick and Mae’s Café & Bakery in Bath. Manager Ryan Ballard highlighted the unique offerings of the café, stating, “What’s not already here is a breakfast place on Maine Street in Brunswick.”
Baked on Maine is distinguished by its diverse menu that includes items such as smoked brisket and pulled pork, which are incorporated into both breakfast and lunch sandwiches. Ballard emphasized that the café’s offerings will differ significantly from other local establishments, catering to a variety of tastes.
Continuing the tradition of Wildflours, which is a 100% gluten-free bakery, Baked on Maine provides menu options that are available both gluten-free and with gluten. This approach aims to broaden the café’s appeal and attract a wider customer base. Ballard noted, “Making the café just gluten-free would really limit the customer base,” which influenced their decision to feature both gluten-free and traditional options.
The owner of Baked on Maine, Ned Horton, is a Nashville-based real estate investor with roots in Brunswick. Horton and his team expressed interest in establishing a presence on Maine Street after learning that the Great Impasta location was available. They ultimately decided to launch this new café rather than relocating Wildflours, focusing on showcasing the offerings of both Wildflours and Mae’s.
In its initial days of operation, Baked on Maine has experienced a steady flow of customers. The café is currently open from Friday through Monday, operating between 8 a.m. and 2 p.m. at 42 Maine Street.
