Bartenders Face Shrinking Tips as Tipping Norms Shift

Tipping practices for bartenders are undergoing a notable transformation, with many bartenders reporting decreased gratuities from patrons. This shift has particularly raised concerns among those in the industry, who attribute the change to differing attitudes about tipping among younger generations, especially Generation Z. As establishments increasingly adopt digital tipping options, the question remains: how much should one tip a bartender?
A recent discussion highlighted by various bartenders across the United States reveals a growing frustration regarding the trend of lower tips. According to Washington, D.C.-based hospitality expert and veteran mixologist Derek Brown, a standard tipping rate for bartenders should be around 20%. Brown stated, “That’s how much a tip should be.”
In Austin, Texas, bar manager Jonathan Hall echoed this sentiment, noting a gradual increase in accepted gratuity over the years. Hall mentioned that the norm has shifted from 15% to 18%, and now typically sits at 20%. This aligns with insights from restaurant management software company Toast, which emphasizes that bartenders should receive a percentage-based tip for recurring drink orders.
Understanding Tipping Etiquette
Despite the prevalence of these tipping norms, Toast cautions that there is “no one-size-fits-all answer” regarding how much to tip. A common guideline suggests tipping $1 to $2 for each alcoholic drink ordered, including beer, wine, and standard mixed drinks. For more elaborate cocktails or when maintaining a tab, a tip of 15-20% of the total bill is recommended, similar to restaurant practices. Hall also noted that while most bartenders appreciate a 20% tip, they do not expect this on bottled or canned beverages.
Even for simpler orders, the minimum tip should be $1, according to Toast. This gesture recognizes the bartender’s time and effort. When ordering labor-intensive cocktails, patrons are encouraged to tip more generously, particularly for drinks that require additional skill or preparation.
Several factors can influence tipping behavior at bars. The quality of service, time of day, and the relationship between the bartender and customer all play significant roles. Toast advises that if a bartender provides exceptional service—such as attentive interaction or personalized drink recommendations—consider tipping more generously.
Real-Life Perspectives on Tipping
Regular patrons often have their own strategies for tipping. Monica Baber, a customer from South Florida, shared her approach, stating she aims to tip well, especially when the service is commendable. “If someone is giving me great service and paying attention, I try to stick to 20%,” she said. Conversely, she mentioned that poor service might lead her to adjust her tip downward.
In Seattle, Josh Lough adheres to the $1-per-drink recommendation. He typically tips a dollar per round, adding an extra dollar when settling the bill. “I will tip two bucks per round if they are a willing conversationalist,” he noted, indicating that engagement influences his tipping habits.
There are specific circumstances where tipping less or not at all may be appropriate. Toast highlights that if a bartender is rude or inattentive, it is acceptable to reduce the tip. However, patrons should consider whether external factors, such as a particularly busy night, may have affected the bartender’s service.
In self-service bars, where customers pour their own drinks, tipping is not required, though leaving a small amount for any staff assistance is still appreciated. At large events or gatherings, gratuities are often included in the final bill, so checking the receipt can prevent unintended double tipping.
As the conversation around tipping evolves, both bartenders and patrons must navigate these changing expectations. With a mix of traditional practices and new digital norms, the tipping landscape continues to shift, reflecting broader societal attitudes toward service and compensation.
